I’ve created a task, but made a mistake in the reference. I want to change the reference, so I find it in the task list, click “X” to remove the old one and put in the new one. There is no button to save my changes, so I click the Back arrow. The task still shows with the old reference in the task list.

If a project is not synced with Paratext, the reference can be changed by opening the task and changing the reference and using the back arrow to save it.
If the project is linked with Paratext, the data in the task is considered to be linked to a particular place in Paratext. If you click on the Task in Project Settings to edit it, then use the Delete Task at the bottom of the screen, you can create the task with the desired reference.
